PMMI Corner BAKING & SNACK: MEETING GROWING DEMAND Market outlook indicates opportunities (and challenges) for OEMs. F BY: JULIE ACKERMAN rom gluten-free to whole grains, con-sumers are seeking to accommodate their increasingly busy lifestyles with healthier snacks and baked goods on the go. And ac-cording to PMMI’s 2012 Bakery & Snacks Market Assessment, sales of global bakery products are expected to increase 4.5% annu-ally, reaching US $410 billion by 2015. To meet this increasing demand, bakery and snack manufacturers are looking to OEMs for solutions to ramp up production. Those same machinery solutions must also be increasingly ﬂ exible to accommodate new packaging materials and formats, from variety packs to single serve. PMMI’s recent Bakery & Snacks Market Assessment iden-tiﬁ ed the following machinery needs from bakery and snack manufacturers: • Increased automation in the form of more robotics • User-friendly HMIs (human machine interfaces) • Graphic-based controls The ﬁ nal piece of the operating and ef-ﬁ ciency puzzle is making machines easier and faster to clean and sanitize. The Food Safety Modernization Act (FSMA) is forcing bakery and snack manufacturers to adhere to stricter guidelines for measuring machine safety, reliability, hygiene and compliance as they process and package dry goods. Both OEMs and bakery and snack manu-facturers can beneﬁ t from PACK EXPO Las Vegas 2013 (September 23-25; Las Vegas, NV). This critical food safety resource, with features including the Food Safety Summit Resource Center, will address concerns and questions about FSMA compliance.
